Ingrédients

  • 150 g Viande hachée (veau, porc, bœuf ou un mélange)
  • 1 jaune d'oeuf
  • 1 c à café vin blanc
  • 1 c à café sucre
  • 1/8 c à café clous de girofle
  • 1/8 c à café safran
  • 1/4 c à thé cannelle
  • 1/4 c à thé poivre noir (au goût)
  • 2 tasses bouillon (poulet, bœuf ou mélange 50/50)
  • 1 tasse lait d'amande
  • 2 à 3 c à café farine de riz
  • 1/8 c à café sel

Instructions

  • Mélangez la viande hachée avec le jaune d'œuf, le vin, le sucre et les épices et formez des boulettes
  • Faites mijoter le bouillon et ajoutez vos boulettes de viande
  • Cuire jusqu'à ce qu'ils soient bien cuits. 
  • Retirez les boulettes du bouillon et préparez votre lait aux amandes en utilisant le bouillon dans lequel vous les avez cuites.
  • Faites chauffer votre lait aux amandes et ajoutez la farine de riz et les épices.
  • Faites cuire votre bouillon jusqu'à l'épaisseur désirée.
  • Vous voudrez peut-être filtrer votre bouillon avant de servir, car la farine de riz pourrait former des grumeaux. 
  • Ajoutez plusieurs boulettes dans votre bol et versez dessus le bouillon au lait d'amande.

Pumpes - Take beef, pork or veal, one of them and raw, all together chop it then grind them in a mortar as small as you may, then cast thereto raw yolks of eggs, wine, and a little white sugar: caste also thereto powder pepper and mace, cloves, cubebs, powder cinnamon and salt and a little saffron; then take and make small pellets round enough, and look that you have a fair pot of fresh broth of beef or of capon and ever throw them thereon and let them seethe till they be enough; then take and draw up a thrifty milk of almonds, with cold fresh broth of beef, veal, mutton or capon, and thicken it with rice flour and with spices; and at the table, lay the pellets five or six in a dish and then pour the syrup on it and serve it, or else, make a good syrup and lay the pellet thereon and good service.
